Walser Käsfladen, Berghotel Körbersee-style

For the dough:

Use 300g flour,
1 package (7g) of dry yeast,
a sprinkle of salt,
1 egg yolk and a little lukewarm water to form a dough (similar to pizza dough, not too firm and not too soft).
Cover and let rise.

For the filling :

Combine 300g of grated cheeses (mix 2-3 varieties including gruyere or similar and gouda) with 100g sour cream,
1 tbsp crème fraîche,
0.25l cream,
3 eggs,
2 tbsp flour,
2 tbsp chives,
150g onions (finely sliced and turned in melted butter).
 

Roll out dough about 2 inches thick and place on a deep baking sheet or cake tin, pushing the dough up at the sides. Add filling and bake at increasing heat for about 30 minutes, starting at 160°C/320°F, until golden brown.

Difficulty: normal
Serves about 4 people.
